Thepla

Serves 2 people.

Ingredients:

½ Bunch Methi leaves.
1 tsp Ajwain(Ova in marathi)
1 Crushed green chili (you can add more as per ur taste)
1 tsp Corriander powder
1 pinch of hing
1 tsp Cumin seed powder
½ tsp Turmeric powder
1 tbsp Ginger-Garlic paste
1 Cup Wheat flour
Salt to taste.
Oil.

Method

Take the flour in flat vessal. Mix all the ingredients and add 1 tsp of cooking oil. Knead the flour using water. When properly kneaded leave aside for 15 min. Make medium sized balls of the dough. With help of rolling pin roll the balls into small round shapes, make them thicker than chapati. Roast it on hot tava. Apply oil while roasting. Roast both sides properly. And remove it from tava.

Aditonal tips:
You can use ghee instead of oil for roasting. As the theplas are thicker than chapatis roast it on medium heat and make sure it gets roasted properly on both sides. Use chili or lime pickle along with these thepla.

Sweet Corn and Green Peas

Serves: 2

Ingredients

2 cup sweet corn.
1 cup green peas.
1 medium onion.
1 tea spoon garam masala.
1 tea spoon red chilly power.
1 tea spoon mustard seed (mohri) and cumin seeds (jeera).
1 tea spoon ginger garlic paste.
1 table spoon cooking oil.
salt

Method.

Coarsely grind the green peas and sweet corn. Heat oil in a kadhai. Add cumin and mustard seeds. When the mustard seeds start popping add chopped onions. Then add ginger garlic paste, chilly powder, garam masala. Add green peas and sweet corn. Add salt to taste. Sprinkle 2 tablespoon water and cook till done.

Additional tips
You can add tomato puree or sauce to this while cooking. Do not add tomato if you plan to cook the dish on the night, before trek.
You can also add small paneer pieces, or grated paneer.

Potato Cheese Sandwich

Serves: 3

Ingredients

4-5 Medium sized boiled potatoes
grated cheese 25-50 gm (as per your choice) ( or 2 Amul cheese cubes)
salt and black pepper to taste. (you may also use red chilly powder along with this)
1 Sandwich bread

Method


Peel and mash Potatoes while they are hot. Add grated cheese, salt and black pepper, and mash. Spread this mixture on one slice and top with another slice. Do not grill this if you are going to take it for trek. Because the melted cheese wouldn't taste good.

This is also an instant energy booster, on trek, as there are carbohydrates in potatoes.

Additional tips:

You can also add 1/2 teaspoon ginger-garlic paste, and use mint chutney as spread for top slice
You can grill the sandwich if you wish to eat it at home or eat immediately. This tastes good with tomato sauce or chilly sauce.
